INGREDIENTS:

01. Small whole chicken

02. Jersey Royal potatoes 

03. Carrots 

04. Wild watercress

05. Shallots 

06. French garlic

07. Lemon thyme

08. Lemon juice and zest 

09. Olive oil

10. Sea salt

11. Green peppercorns 

12. Smoked paprika 

DIRECTIONS:

01. Wash chicken thoroughly with cold water 

02. Mix crushed green peppercorns, sea salt, lemon thyme, smoked paprika, olive oil, lemon juice and zest until loose paste

03. Rub paste all over chicken inside and out

04. Place left over lemon, whole garlic cloves, sprigs of lemon thyme in belly of chicken

05. Half shallots and carrots (length way), season with sea salt and olive oil, place in baking tray

06. Add chicken to tray (breast side down) and bake at 160 for 1 h 20
